Not so porky pork

A fave of mine for Sunday lunch is the following recipe for Marinated Pork Tenderloin on a bed of apples. It's really delicious &, obviously, a relatively low fat option. I've worked it out at about 6 WW points plus another 2 for the potatoes

INGREDIENTS:

- pork tenderloin
- 5 sheets of parma ham
- 2 garlic cloves
- fresh or dry parsley
- 3 apples
- greaseproof paper

TECHNIQUE:

- crush the garlic
- chop the parsley and stir into the garlic with the oil
- rub the garlic mix over the pork tenderloin
- lightly season
- wrap the pork in the parma ham
- core, peel and slice the apples
- lay them as a bed along the baking tray
- position the tenderloin on top of the apple bed
- leave to marinate while you prepare the vegetable
- get the greasproof paper, wet it & scrunch it up
- lay it over the meat
- put it in the oven for 15 minutes
- remove the paper & cook for another 15 minutes
- rest for 5 minutes and use the juices from the tray to make a pork and apple gravy

Serve about three slices with roast potatoes, carrots and broccoli.
